Shoko and I thought the month of June should be the kick off month for summer. What says summer more than salads? There are so many salads. You have your potato, green, Greek. pasta……the list is almost endless. 
Our choice was potato salad. Potato salad is pretty easy to make and basic. You can put a variety of things in the potato salad. If, you read a recipe and don’t like what they added you can miss that item and it won’t make the potato salad taste like crap!
No one needs to see cut up potato and egg Tyebe. Ya, we could show it when it’s all cut up. 
It needs to be more up close and personal….c’mon….let me see small tasty ingredients

See how the red pepper gives the salad colour. I tell ya Tyebe at least 70% of the meal is presentation. We just get our food plunked down in front of us. Mom used to tell us all the good things about our meal while we were eating but dad just gives it to us. We need red pepper in our tuna Fancy Feast.
POTATO SALAD
2 big old potatoes
2 eggs
1 cup of grated cheddar cheese
1 stalk of celery
3 green onions
1/4 cup of Craisins
5 strips of cooked bacon
3 slices of dill pickle…chopped
1/4 C of chopped red pepper
1 tbsp of Bold and Spicy mustard. ( or to taste)
1/4 C mayo (or to taste)
1 1/4 tsp of thyme (to taste)
salt and pepper to taste.
sprinkle of sweet smoked paprika
Once you have the ingredients together chop the items small enough for a good taste of everything in one chew. Add thyme, salt and pepper. In a small dish mix mayo and mustard, then add to the potato salad. Smooth down potato salad and sprinkle with Sweet Smoked Paprika If, you don’t care for something, toss it out and add what you like. Have fun with it.

Potato salad is one of Our Mummy’s favourites. In fact, She made it for her festive Shavuot (Pentecost) meal, to eat with the salmon which was the main course.
We also got to taste the salmon, which was yummy – but she wouldn’t let Us have any of the potato salad because She adds onions to it and Mummy says they are Furry Bad for kitties!

Smart mom…salmon for us is great. Potato salad not so good for us. i don’t think we’d like the onions anyway. Did you know that if you don’t have quite enough ayo you can add lemon juice to stretch it out? A little something mom found out and it works.

Meowser dear furiends, the strangest potato salad I’ve ever seen is a Panamanian recipe mom learned about. Separately boil cubes of potatoes, carrots and beets until done (about 15 minutes, depending on the size of your chunks. Cool and dry separately, then combine with mayonnaise…which turns the dish into a lumpy pink, but it is yummy and healthy.

Shoko dear furiend, yes, this Panamanian version is made with mayo, but the beets turn the mayo pink. It is served cold, like many times of potato salad.

oh that sounds tasty!!! we love potato salad with many ingredients, it is like a travel, every piece has a different taste and together they are an adventure on our tongue… btw: do you remember the “BIG” potatoes I brought for the fish cakes? hahahahahahahahaha

There should be a small jazz festival in your mouth with this potato salad. Mom remember those huge potatoes all right. Dad says the pots gave them a laugh. Mom says they looked like baby potatoes. mol

There is a joke from expat Americans in Germany where they say: Germans toss everything together and put mayo on it and then call it salad. It seems we are not the only ones 😀

Wow, fancy! I’ve never eaten a potato salad with so many ingredients. Even the ones from restaurants, it’s just potatoes, eggs, carrots and cheese. 😀

We’re all different Kristiina. This is what you like and that’s all that matters but if you want adventure try adding something else to your salad.

This is a recipe from Mike Hartley. His cat is a dear friend of Shoko and Tyebe’s in Cat Scouts. This guy knows delicious food!
This can be served on a hoagie roll, or on top of lettuce, either way, with a bowl of gazpacho it’s a nice cool summer evening meal!
1 lb. shrimp, peeled and deveined
1 tbsp.extra-virgin olive oil
1 tsp Kosher salt
Freshly ground black pepper to taste
1/4 med red onion, finely chopped
1 stalk celery, finely chopped
2 Tbsp freshly chopped dill
Toasted bread or buttercrunch or romaine lettuce, for serving
For dressing
1/2 c mayonnaise
Juice and zest of 1 lemon
1 tsp dijon mustard
Directions
Bring one quart of salted water to a boil
Add shrimp to boiling water & remove from heat until shrimp are completely opaque, 3 to 5 minutes.
In a large bowl, whisk together mayonnaise, lemon juice and zest, and dijon and season with salt and pepper. Add cooked shrimp, red onion, celery, and dill to bowl and toss until combined.
Serve on bread or over lettuce.
